Caro from Mighty Roar shows us how to use this autumn star ingredient, butternut squash three ways. This is a fun cook along class or just watch and learn as Caro demonstrates
In this 2 hour seasonal workshop, you will be able to create one, two or all three dishes.
- Butternut Squash and Roasted Red Pepper Soup with Walnuts
- Butternut Squash & Mushroom Risotto with homemade vegan parmesan ( Caro will demonstrate how to make your own vegan parmesan)
- Butternut Squash, Apple and Hazelnut Buckwheat Muffins
In addition you will learn how to make your own vegan parmesan that is a delicious accompaniment to a wide range of dishes. You will receive all recipes when you make your booking so you can prepare to follow a long or go into it later prepared to succeed.
Caro has worked and lived in the food world all her life. She trained initially with Deborah Durrant www.deliciousraw.kitchen and was hooked. Wanting to share her passion she went began catering for yoga events, private parties and bespoke raw patisseries.
Her Mighty Roar brand of granolas proved to be a huge success supplying in the UK and France.
Caro lives by her principles, spends a lot of time on her allotment with her husband, dog and friends. She is also a dedicated Ashtanga yoga practitioner.
